
A few of my favorite things: my baby and a great fish recipe. Nolan has been such a good baby (I think I say that all the time) but he sure is sweet. Greg and I often say we have to have a baby in the house in order to have the spirit here. Anyway, Nolan is quite the gem (right along side his two brothers of course). Next, my friend gave me this GREAT fish recipe. Here's it is:
1/4 cup butter, melted
3 Tbsp Dijon mustard
1 1/2 Tbsp honey
1/4 c dry bread crumbs
1/4 c finely chopped pecans
4 tsp chopped fresh parsley
4 (4 oz) fillets salmon
1 lemon, for garnish
Directions:
1. Preheat oven to 400 degrees
2. In a small bowl stir together butter, mustard and honey. Set aside. In another bowl, mix together bread crumbs, pecans and parsley.
3. Brush each salmon fillet lightly with honey mustard mixture and sprinkle the tops of the fillet with the bread crumb mixture.
4. Bake salmon 15-20 minutes in the preheated oven or until it flakes easily with a fork. Garnish with a wedge of a lemon. It is DELICIOUS!! Enjoy!

mmmmm. I've had some frozen salmon in my freezer for a couple months now trying to figure out what to do with it, my last attempt was not great. But this looks delicious! I'll have to give it a try.
